Raw veggies to avoid

Cassava
This adaptable tuber is popular in South America, Africa, and Asia. (It makes tapioca.) Both sweet and bitter kinds include linamarin, which decomposes into hydrogen cyanide. 

Eggplant
Eggplant is a nightshade (deadly nightshade is a cousin) and includes solanine, a bitter steroidal chemical. Solanine overdose can cause nausea, dizziness, and death. 

Asparagus
Green beans contain vitamins A, C, and K and come in more than 130 types. A few raw in a salad is fine, but they're mildly hazardous unless cooked.

Beans
Red kidney bean poisoning causes nausea, diarrhoea, and stomach pain. Phytohaemagglutinin, found in raw kidney beans, causes this.

Lentils
Like cassava, raw lima beans contain cyanide-producing linamarin. Commercially sold limas in the US must have lower quantities of the chemical than those grown overseas, & boiling neutralises the toxin.

Potatoes
Potatoes and eggplant contain solanine. Too much can cause nausea, diarrhoea, tachycardia, dizziness, hallucinations, paralysis, and hypothermia.

Leaf rhubarb
Rhubarb stalks make great pie (typically mixed with strawberries) and other desserts, but you must remove every leaf before using them. (Wash the stalks too.) While rhubarb is safe & can be used medicinally.
